If you don’t like Nutella or chocolate you can try to make it using other ingredients, try to change it for white chocolate, or even lotus spread.

You could also fill it with cheesecake filling, you can use this dough recipe to make fruit buns too. So if you don’t like Nutella don’t worry, just add you favorite ingredients.

Baking

We cooked this for abut 25 minutes at 200 C or 392 F, also keep an eye on it becase the time really depends on you oven! ALWAYS keep an eye on it:’)

yeast

We are using fresh yeast on this recipe but if you can’t find it or just feel more comfortable using active dry yeast, you can also do that.

3 grams of fresh yeast are the same as 1 gram of active dry yeast. So this would mean that we need5 gramsof dry yeast for this recipe. But you need to change the recipe process a little bit when using this type of yeast we can’t use cold water, we need a warmer water to activate the yeast. So we are gonna make a sponge, here is how we are gonna be making this recipe when using dry yeast.

You wanna mix the dry yeast and lukewarm water with 1 tablespoon of sugar, cover with a damp towel and allow it to rest for about 8-10 minutes, if you have a warm place you can go it’s gonna be a faster process just so you know. Now you can do the rest of the recipe as normal.

Kneading process

Let’s say in a recipe they tell you to knead a dough for 20 minutes, but you feel like its still really hard, or not stretchy at all, you have to keep kneading. It all depends on the dough and some gets more elastic than others, but they all should be elastic.

Here is a little trick to know if the dough is ready, you should stretch one side of it and keep stretching until you see a really thin like dough layer? Will show you pictures so you know what i mean, it should not break when stretching, if it feels hard, knead more.

Just because in a recipe they say 20 minutes and you end up kneading for 30, it doesn’t mean that they are giving you a wrong recipe, so dont give up on it. It always takes different times for everyone that’s why you normally write from x to x time:)

Store-bough buns vs homemade.

When we were kids we once tried this famous chocolate bun dessert that is super popular in our country, literally everyone ate it at school, it was everyone’s favorite.

Then we tried we realized it was too sweet, it didn’t have as many chocolate, and it felt dry even though it has so many additives and preservatives, it was so so so lacking in chocolate and flavor.

When you make something at home you can use fresh ingredients, add as many chocolate or filling as you’d like and you are eating cleaner, you can always chose not to put the Nutella and just do a ganache with dark chocolate and heavy whipping cream. In general you are eating this Nutella sweet bun just how you want to eat it.

They don’t preserve as long as the artificial ones but they’re so much better in flavor.

INGREDIENTS:

Dough

  • 270 grams bread flour (2.16 cups)
  • 170 grams all purpose flour (1.36 cups)
  • 150 ml water (5.07 floz)
  • 70 grams sugar (2.47 oz)
  • 2 eggs
  • 15 grams fresh yeast (1 tablespoon)
  • 40 grams soft butter (1.41 oz)
  • 150 grams chocolate chips (5.29 oz)

Filling

  • 200 grams Nutella (0.67 cups)

Eggwash

  • 1 egg

1)First step, Eggs

Let’s make this super delicious sweet nutella buns.

Firstly, you wanna beat two eggs and add the granulated sugar on it. Then, whisk super fast so the sugar doesn’t cook the eggs (we dont want scrambled eggs here please)

2)Second step, yeast

Now you want to add water and the fresh yeast. If you are using active dry yeast you have the instructions for the yeast at the beginning of the post! Sift the bread flour and all purpose flour,

3)Third step, kneading

You want to make sure to knead this dough for 15 good minutes, you can use a Stand mixer if you have one, using the dough hook attachment on medium speed. If you dont have one you need to know that it may take you a little longer, dont stress out, this dough is super sticky and it has to be that way, dont add extra flour please, please.

Now after 15 minutes add soft butter and keep kneading for about 5 to 10 more extra minutes.

4)Forth step, first proof

this is what the Dough should look like, you can see that its still sticky but super elastic and beautiful hehe.

Allow the dough to proof for 1h and 30 minutes, you want to make sure this step is made in a warm place, the dough needs to be warm:) and it also needs to be covered, use plastic wrap or damp paper. Whatever works the best for you, even a towel.

5)Fifth step, chocolate paradise

You can see how to dough has grown so much (keep in mind that if after 1h and 30 minutes its not that big you can leave it 20 extra minutes). It’s time to add the chocolate Chips, use as many as you’d like. Remember, we are adding Nutella later so we don’t want to use that many chips

6)Sixth step, sections

If you want you can weight the dough or not idk, this is just if you want them to be the exact same size, then /the number of sweet buns you want. We did 6 sections that you want to roll out into balls. Now we are super close to eat them Nutella sweet buns hehe.

7)Seventh step, Nutella Nutella

Now It’s time to add Nutella, use as many as you want. We are not making some healthy dessert, don’t you worry you don’t even have to weight it okays but as you can see we are using a lot, we didn’t weight it so we are gonna put an approximate number in the ingredients. At this point you want to close it and pinch the edges so the Nutella doesn’t scape while baking.

8)Eight step, second proof

At this point you want to put all the buns in a baking pan, keeping a distance between them because they’re gonna grow so much. if you feel like you have a small baking pan and you can only out 3 then do 3 in one and 3 on another one. Make sure to cover with plastic wrap and allow to proof in a warm place for 30 more minutes.

Beat one egg and paint the whole bun with a brush. Cover entirely, well you don’t have to cover the chocolate chips lol.

9)Ninth step, baking

Make sure to bake the Nutella sweet buns at 200 C or 392 F for about 25 minutes approximately. You have to keep an eye on your oven you will know they’re ready when they start to get brown like on the pictures if you feel like they’re ready before that take them out of your oven and if you need more time its fine, all oven works different and what could be 25 minutes for me could also be 30 for you! We don’t want no raw dough.
