COLLINS FAMILY SLUSH PUNCH

We have this drink at every Collins' family get together. It is so good, we always run out.. .So make double!!!

SLUSH PUNCH

1 (12 oz) can frozen lemondae

1 (12 oz) can frozen orange juice

17-20 cups water

4 cups sugar

1 tsp vanilla extract

1 tsp almond extract

1-1/2 -2 (2 liter size) bottles of lemon-lime soda

Mix all ingredients excpet soda together and freeze in 2 gallon size Ziplocfreezer bags (or 2 empty and clean gallon ice cream buckets). Let thaw for a few hours before serving. When ready to serve, break it up with a potato masher. Add soda.

NOTES: If you forget to pull it out to thaw, use the microwave.

Makes about 30 servings

TURTLE BROWNIES

Who doesn't love a ooey, gooey, carmel Chocolate Brownie. These will melt in your mouth.

1 German Chocolate cake mix

12 oz. chocolate chips (2 cups)

1 cup chopped pecans

1 (14 oz) pkg caramels

3/4 cup butter (room temp)

2/3 cup canned evaporated milk

Unwrap caramels; melt in pan with 1/3 cup milk. Mix cake mix with 1/3 cup milk and 3/4 cup butter, until it holds together, stir in nuts. Press half the cake mixture into a 9x13" cake pan and bake for 6 minutes at 350 degrees. Sprinkle Chocolate chips on top of warm cake; pour melted caramels over chips. Crumble remaining cake mix on top (if too sticky to crumble, take large spoonfuls of dough and pat with hands to lay over top). Bake 15 -18 minutes at 350 degrees. Let sit several hours so it's not so sticky.

Notes: Don't worry if there are bare spots when you crumble dough on top. It will spread during baking. To speed up wait time, put in freezer or frigerator.

CHICKEN DIVAN

8-10 pieces of chicken, cooked and cubed

1-1/4cups cooked rice, (2-1/2 cups uncooked)

1 tsp salt

5 cups water

2 cups frozen broccoli (could use 1 head fresh), steamed

2 cans cream of chicken soup

1 cup sour cream

1 cup greated cheddar cheese

In a 9x13" baking dish. layer rice, broccoli, then chicken, and sprinkling of cheese. Spread soup and sour cream mixture on top. Sprinkle with remaining cheese and bake 350 degrees for 30 minutes or until hot.

Notes: I like to sprinkle Frech Fried Onions on top before baking.

QUESO BEAN DIP

This is a quick dip to put together using only3 ingredients. YUM!!! Serve with your favorite Tortilla Chips.

QUESO BEANDIP

1 can refried beans

1 jar salsa

1 can Campbell's Nacho Cheese Soup

Mix all ingredients together and heat until warm in the microwave.

NICOLE'S 'MADE FROM SCRATCH' BROWNIES

I'm not a big fan of homemade brownies. I like my brownies fudgey and it seems like most homemade brownies turn out fluffy and cake-like.A while ago we had a family party at my Brother and Sister in-laws house. My sis-in-law, Nicole, served brownies that were really good andfudgey.I was surprised to find out they were homemade, made from scratch. Here is the recipe.

NICOLE'S 'made from scratch' BROWNIES

1/2 cup cocoa

2 squares butter

*melt these in a pan and add to the following:

2 cups sugar

4 eggs

1/2 tsp salt

2 tsp vanilla

1 1/2 cup flour

Mix until everything is incorporated. Pour into a greased 9x13" baking dish.

Bake at 350 for 30 min, or until a toothpick inserted in the center comes out clean.

Eat as is warm or cold. Or Frost with yourfavoriteFrosting.

MOCK ENCHILADAS


My best friend and neighbor (how awesome is that?) shared this recipe with me. It is one of her quick and easy go-to dinners. Everything is prepared in one skillet. HINT: if you use paper plates, you will only have one, 1, uno dish to wash! SCORE!!!! And speaking of score, this would be a great meal to serve to the guys (& gals) on game night.

MOCK ENCHILADAS

1 lb ground beef

1 small onion, chopped

1 can enchilada sauce (red)

1 can chili with beans

1 8oz can tomato sauce

1 lb grated cheddar cheese

1 cup sour cream

1 bag Frito corn chips

Brown meat and onion. Stir in remaining ingredients except chips. Cover and simmer on low 20 minutes. Serve over Fritos.

PINEAPPLE CHERRY DUMP CAKE

1 can crushed pineapple

1 can cherry pie filling

1 box yellow cake mix

1/2 cup butter, melted

Grease a 9 x 13 inch baking dish. Dump the pineapple and the pie filling into the pan. Sprinkle the cake mix on top. (Don't stir, just dump.) Drizzle the melted butter on top of the cake mix. Bake uncovered at 350 degrees for 30 minutes or so until golden brown.

Notes: This is really good served with whipped cream on top.
